WINEMAKING
Hand-picked then whole-bunch cold pressed for up to 48 hours.
Traditional Charmat production method. Charmat method sparkling wines are bottled directly after secondary fermentation without additional aging, giving the wine a fresh fruit character. This technique helps retain the grapes’ aromas more than the traditional methode Champenoise.
THE WINE
The wine is a soft shade of salmon hue. On the nose the wine offers strawberries, peach and floral.
This sparkling wine displays as vibrantly dry with crisp acidity, followed by tangy strawberry, peaches and sweet red apple fruit.
WINE PAIRING
Pairs well with fresh oysters, smoked salmon blinis, mushroom arancini, glazed ham, dark chocolate or mixed berry pavlova.

Named and inspired by our family Wine Dog, Labradoodle, ‘Peggy Sue’.
From the moment she is poured, Peggy Sue's delicate bubbles dance exquisitely to the top of the glass, ultimately revealing a Charmat method pale salmon pink hue. Offering a fruity palate of peaches and strawberries, with a vibrantly dry and crisp acidity.
