Fermented in open tanks using 10% whole bunch fruit from Kangarilla in the Adelaide Hills at an elevation of 350 metres.
Aged in new and seasoned French Hogsheads for 9 months.
Whole bunch fermentation method means that the bunches are not de-stemmed and included in the fermentation tank intact. Whole bunch fermentation is the original method of making wine before the introduction of presses. This method of fermentation makes the wine more complex, weaving in spicy and herbal flavours, adds tannin structure and smoothes out high acidity. The intact stems impart a whole range of aromatic and textural qualities that only whole bunch fermentation can offer.
VINTAGE CONDITIONS
The 2016 vintage began with a below average winter rainfall in the Adelaide Hills. This was followed by a warm and dry Spring, bringing enhanced flowering and fruit set.

A heady surrender to Strawberries, Raspberries and Spice. Hints of incense and stewed cherries.
PALATE
Velvety tannins. Cherry, Earthy, Dense, Forest Floor. Smooth finish. Medium Length

After time has perfected this masterpiece by our Winemaker Phil Christiansen our Pinot Noir is a stunning balance of velvety tannings, raspberry, cherry and incense. The wine dances smoothly on the palate.
