What Makes This Wine So Special?
The 2016 vintage began with a below average winter rainfall in the Adelaide Hills. This was followed by a warm and dry Spring, bringing enhanced flowering and fruit set.
Fermented in open tanks using 10% whole bunch fruit from Kangarilla in the Adelaide Hills at an elevation of 350 metres.
Aged in new and seasoned French Hogsheads for 9 months.
Hand picked fruit.
10% whole bunch fermentation method, wherein the fruit bunches are not de-stemmed and included in the fermentation tank intact. Whole bunch fermentation is the original method of making wine before the introduction of presses. This method of fermentation makes the wine more complex, weaving in spicy and herbal flavours, adds tannin structure and smooths out high acidity. The intact stems impart a whole range of aromatic and textural qualities that only whole bunch fermentation can offer.
The light ruby red wine shows a heady surrender to strawberries, raspberries and spice, with hints of incense and stewed cherries.
The palate displays exquisite velvety tannis, with hints of cherry, earth and dense forest floor, smooth finish with medium length.
