Vineyard Conditions 2021
McLaren Vale enjoyed healthy yields, bolstered by early February rainfall, and the equal earliest start of vintage on record, triggered by some February heat. This created magnificent ripening conditions from fruit set and flowering through veraison to final ripening. A mild autumn kept sugar levels at bay and furnished excellent quality in the reds, with strong varietal definition, concentrated aromatics and deep colours and tannins. Arguably the best quality vintage so far this century.
The Wine 2021
We pay homage to the Shiraz grape by using traditional wine making techniques, such as open ferment and basket pressing methods along with American Oak barrel fermentation for minimum 24 months to create an exceptionally standout wine.
A deep rich red with purple hues in appearance. On the nose Liquorice and poached rhubarb. On the palate sumptuous burst of fruit cake, blackberry, blackcurrant, dark chocolate and cherry on the palate. With fruity spice, hints of pepper it’s Christmas tart in a glass!
The tannins in Shiraz complement red meat beautifully, so we suggest pairing this substantial and exuberant wine with Grilled Steak, Beef Bourguignon or enjoy with the spiciness of a Lamb Korma.

NEW RELEASE 'CHASTE' SHIRAZ 2021
Previous Vintage 'Chaste' Shiraz 2020 - 92 Points Halliday 2024
Shiraz suits the tannic clip of American oak. Fun! Dark, brooding and carnal. Star anise, Chinese medicine cabinet, clove and oodles of plate-staining dark fruits. Despite the heat and rather obvious power, the wine remains compact and relatively poised while driving long.
Previous Vintage 'Chaste' Shiraz 2019 - 92 Points Halliday 2023
Consummate craftsmanship at this address. A Shiraz from a hot year that serves up savory riffs on plum, licorice, tapenade and mocha oak. There is an uncanny refinement here, as with all the wines. Sure , there is some heat packed across the finish. But each rivet serves a greater weld. Good drinking.
