CHASTE SHIRAZ 2019 VINTAGE - AVAILABLE BY THE DOZEN
We pay homage to the Shiraz grape by using traditional winemaking techniques, such as open ferment and basket pressing methods along with American Oak barrel fermentation to create an exceptionally standout wine. Notes of Liquorice and earthy tobacco on the nose with a flavour burst of Fruit cake, Blackberry, Blackcurrant and Cherry on the palate. With fruity spice, hints of pepper it’s Christmas Tart in a glass! Pair this big, lush wine with Barbecued Ribs, Pepper Steak or Spicy Mexican.
VINTAGE CONDITIONS FOR 2020 IN MCLAREN VALE
Over Summer the McLaren Vale region experienced very little rainfall. Overall disease levels remained low due to the dry and warm, windy conditions.
At harvest, we experienced a long cool ripening period. The rate of ripening was slower than recent previous seasons. This was beneficial to wine quality.
Natural acidity levels have remained high, Baume’s tended to be higher than normal to get full flavour in the fruit. Shiraz looks to be the stand out varietal with moderate crops and smallish berry size resulting in concentrated flavours.
WINEMAKER PROCESS
Open fermentation. Minimum of 20 months in American Oak. What is open fermentation? After de-stemming the grapes are stored in large open tanks with the winemaker using a large plunger to push the grape skins to the bottom of the tank. This process is repeated frequently per day and gives the wine a deeper, more concentrated colour and intensified flavour.
